Ingredients
8 oz (2 cups) elbow macaroni
2 cups whole milk
1 cup heavy cream
2 tablespoons unsalted butter
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika (optional)
2 cups (8 oz) shredded sharp cheddar cheese
1/2 cup (2 oz) shredded Monterey Jack cheese
Instructions
1. In a large pot or Dutch oven, combine the macaroni, milk, cream, butter, salt, pepper, and paprika. Bring to a boil over medium-high heat, stirring frequently to prevent sticking.
2. Reduce heat to medium-low and simmer, stirring often, until the pasta is tender and most of the liquid has been absorbed, about 8-10 minutes.
3. Remove from heat. Add the shredded cheddar and Monterey Jack cheeses, and stir until completely melted and the sauce is smooth.
4. Let stand for 2 minutes to thicken slightly, then serve immediately.
Tips
For a richer flavor, use extra-sharp cheddar.
To reheat leftovers, add a splash of milk and warm gently on the stovetop or microwave.
Customize with add-ins like cooked bacon, steamed broccoli, or diced jalapeños.
