Ingredients
2 tablespoons unsalted butter
1 large yellow onion, thinly sliced
2 cloves garlic, minced
1/2 cup beef broth
1/2 cup sour cream
4 ounces cream cheese, softened
1/2 cup shredded provolone cheese
1/4 cup grated Parmesan cheese
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh chives for garnish
Instructions
Melt butter in a skillet over medium heat. Add sliced onion and cook, stirring occasionally, until deeply caramelized, about 15-20 minutes. Add garlic and cook 1 minute more.
Pour in beef broth and scrape up any browned bits from the pan. Cook until liquid is mostly evaporated, about 2 minutes. Remove from heat and let cool slightly.
In a medium bowl, combine sour cream, cream cheese, provolone, Parmesan, Worcestershire sauce, salt, and pepper. Mix until smooth.
Fold the caramelized onion mixture into the cheese mixture until well combined.
Transfer to a serving bowl and garnish with chives. Serve warm or at room temperature with crusty bread or steak slices.
