Ingredients
1 (10-12 lb) bone-in fully cooked ham (shank or butt portion)
1 cup packed brown sugar
1/4 cup honey
1/4 cup Dijon mustard
2 tablespoons apple cider vinegar
1/2 teaspoon ground cloves
1/4 teaspoon ground cinnamon
Whole cloves for studding (optional)
Instructions
Preheat oven to 325°F (165°C). Place ham on a rack in a roasting pan, flat side down. Score the surface in a diamond pattern about 1/4 inch deep. If desired, stud each diamond center with a whole clove.
In a small bowl, whisk together brown sugar, honey, Dijon mustard, apple cider vinegar, ground cloves, and cinnamon until smooth.
Brush about half of the glaze over the ham. Reserve the remaining glaze.
Roast ham uncovered for 1 hour. Baste with pan juices, then brush with more glaze. Continue roasting, basting every 20-30 minutes, until internal temperature reaches 140°F (60°C), about 2-2.5 hours total. If ham starts to brown too quickly, tent loosely with foil.
Remove ham from oven and let rest 15 minutes before slicing. Serve with remaining glaze warmed on the side.
Tips
For a caramelized crust, increase oven temperature to 425°F for the last 10-15 minutes of roasting.
Leftover ham can be stored in the refrigerator for up to 5 days or frozen for up to 2 months.
