Ingredients
2 pounds Yukon Gold potatoes, peeled and cut into 1-inch chunks
1/2 cup unsalted butter, cut into pieces
1/2 cup whole milk, warmed
1/2 cup heavy cream, warmed
Salt to taste
Freshly ground black pepper to taste
Instructions
Place potatoes in a large pot and cover with cold water by 1 inch. Add 1 tablespoon salt. Bring to a boil over high heat, then reduce to medium-high and simmer until potatoes are fork-tender, about 15-20 minutes.
Drain potatoes well in a colander. Return to the pot and cook over low heat for 1 minute to remove excess moisture, shaking pot occasionally.
Remove pot from heat. Add butter and mash with a potato masher until butter is melted and potatoes are mostly smooth.
Gradually add warm milk and cream, mashing and stirring until desired consistency is reached. Season with salt and pepper to taste. Serve immediately.
Tips
For extra creamy potatoes, use a ricer or food mill instead of a masher.
Warm the milk and cream to prevent the potatoes from cooling down.
