Ingredients
8 oz (225g) elbow macaroni
2 tbsp unsalted butter
2 tbsp all-purpose flour
2 cups whole milk
1/2 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1/4 tsp paprika
2 cups shredded sharp cheddar cheese
1 cup shredded Gruyère cheese
1/2 cup panko breadcrumbs
1 tbsp melted butter (for topping)
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook macaroni in salted boiling water until al dente, about 7 minutes. Drain and set aside.
In a large saucepan, melt 2 tbsp butter over medium heat. Whisk in flour and cook for 1 minute, stirring constantly.
Gradually whisk in milk and cream. Bring to a simmer, stirring frequently, until thickened, about 5 minutes.
Remove from heat. Stir in salt, pepper, paprika, cheddar, and Gruyère until melted and smooth.
Add cooked macaroni to the cheese sauce and stir to coat evenly. Transfer to the prepared baking dish.
In a small bowl, mix panko with 1 tbsp melted butter. Sprinkle evenly over the macaroni.
Bake for 20-25 minutes, until bubbly and golden brown on top. Let rest for 5 minutes before serving.
