  6. Remove pot from oven. Transfer beef to a cutting board and let rest for 10 minutes. Meanwhile, strain the cooking liquid through a fine-mesh sieve into a bowl; discard solids. Return liquid to pot and keep warm over low heat. Season au jus with salt and pepper to taste.
  7. Slice the beef thinly against the grain. If using cheese, place a slice on the cut side of each roll and toast under the broiler until melted.
  8. Pile sliced beef onto the bottom halves of the rolls. Serve with small bowls of warm au jus for dipping.
