  2. Heat a cast-iron skillet or griddle over medium-high heat. Cook patties for 2-3 minutes per side until a deep brown crust forms. In the last minute, top each patty with a slice of cheese and cover to melt.
  3. While patties cook, split buns and toast cut-side down in a separate pan with a little butter until golden.
  4. Assemble burgers: on the bottom bun, spread 1 tbsp ketchup and 1 tbsp mustard. Add 2 pickle slices, then stack two cheese-topped patties. Top with 2 tbsp diced onion and close with the top bun.
