Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Scrub potatoes and cut into 1/4-inch thick fries. Place in a bowl, toss with olive oil, paprika, and 1/2 tsp salt. Spread in a single layer on the baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
  3. Meanwhile, in a bowl, combine ground beef, 1 tsp salt, pepper, and garlic powder. Mix gently and form into 4 patties, slightly larger than the buns (they shrink). Make a small indent in the center of each patty.
  4. Grill or pan-fry patties over medium-high heat for 4-5 minutes per side for medium. In the last minute, top each patty with a slice of cheese and cover to melt.
  5. Toast buns on the grill or in a skillet until lightly browned.
  6. Assemble burgers: place lettuce, tomato, onion, and patty on bottom bun. Add ketchup, mustard, and pickles as desired. Top with bun.
  7. Serve burgers immediately with hot fries.
