Ingredients
1 1/2 lbs ground beef (80/20)
1 cup breadcrumbs
1/2 cup milk
1/2 cup finely chopped onion
1/4 cup finely chopped parsley
2 large eggs, lightly beaten
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Worcestershire sauce
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
Instructions
Preheat oven to 350°F (175°C). In a small bowl, combine breadcrumbs and milk; let sit for 5 minutes until absorbed.
In a large bowl, mix together the ground beef, breadcrumb mixture, onion, parsley, eggs, garlic, salt, pepper, and Worcestershire sauce until just combined. Do not overmix.
Transfer mixture to a 9x5-inch loaf pan, pressing gently to shape. In a small bowl, whisk ketchup, brown sugar, and vinegar; spread half over the top of the meatloaf.
Bake for 45 minutes, then spread remaining glaze on top. Continue baking for 15 minutes, or until internal temperature reaches 160°F (71°C).
Let rest in pan for 10 minutes before slicing. Serve with mashed potatoes and steamed green beans.
Tips
For a lighter texture, use a mixture of ground beef and ground pork.
Leftover meatloaf makes excellent sandwiches.
To make ahead, assemble and refrigerate unbaked meatloaf up to 24 hours; add 10 minutes to baking time.
