Ingredients
1 1/2 lbs ground beef (80/20)
1 tsp salt
1/2 tsp black pepper
4 slices American cheese
4 hamburger buns, split
4 leaves lettuce
4 slices tomato
4 slices onion
4 pickle slices
ketchup, mustard, mayonnaise to taste
Instructions
Divide ground beef into 4 equal portions (6 oz each). Shape into patties slightly larger than the buns, about 3/4-inch thick. Season both sides with salt and pepper.
Heat a cast-iron skillet or griddle over medium-high heat. Cook patties for 4 minutes per side for medium, or until desired doneness. During the last minute, place a slice of cheese on each patty and cover to melt.
Toast buns in the skillet or on the griddle until lightly golden, about 30 seconds.
Assemble burgers: spread condiments on bun bottoms, then add lettuce, tomato, onion, pickle, and patty with cheese. Cover with bun tops.
Serve immediately.
Tips
For a smash-style burger, press patties thin with a spatula while cooking.
Let patties rest for 2 minutes after cooking for juiciness.
Store leftover cooked patties in fridge for up to 3 days; reheat in skillet.
