Ingredients
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 medium potato, peeled and diced
4 cups clam juice or fish stock
1 cup water
1 bay leaf
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2 pounds littleneck clams, scrubbed
2 tablespoons chopped fresh parsley
Instructions
Heat olive oil in a large pot over medium heat. Add onion and garlic; cook until softened, about 3 minutes.
Add carrots, celery, and potato; cook for 5 minutes, stirring occasionally.
Pour in clam juice and water. Add bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 15 minutes.
Add clams to the pot, cover, and cook until clams open, about 5-7 minutes. Discard any clams that do not open.
Remove bay leaf. Stir in parsley. Serve hot.
Tips
For a richer flavor, use a combination of clam juice and dry white wine.
