Ingredients
2 large oranges
1 large grapefruit
1 large mango, peeled and diced
1 cup fresh pineapple chunks
1 cup strawberries, hulled and halved
1 tablespoon honey or agave syrup
1 tablespoon fresh lime juice
1 tablespoon chopped fresh mint
Instructions
Using a sharp knife, cut off the top and bottom of each orange and grapefruit. Stand the fruit upright and slice off the peel and white pith in strips, following the curve of the fruit.
Hold the peeled fruit over a bowl to catch the juice. Cut between the membranes to release the citrus segments into the bowl. Squeeze the remaining membranes to extract any extra juice.
Add the mango, pineapple, and strawberries to the bowl with the citrus segments and juice.
In a small bowl, whisk together the honey and lime juice. Pour over the fruit and gently toss to combine.
Sprinkle with chopped mint and serve immediately, or refrigerate for up to 2 hours before serving.
Tips
For best flavor, use a mix of sweet and tart citrus varieties.
This salad is best served chilled but not ice-cold.
