1/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 cup milk
1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
Vegetable oil, for frying
1/2 cup granulated sugar (for coating)
1 tablespoon ground cinnamon (for coating)
Instructions
In a large bowl, whisk together flour, 1/3 cup sugar, baking powder, salt, and 1/2 teaspoon cinnamon.
In a separate bowl, whisk together milk, egg, melted butter, and vanilla.
Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
Heat about 2 inches of oil in a deep pot to 350°F (175°C).
Using a small cookie scoop or two spoons, drop rounded tablespoons of batter into the hot oil. Fry in batches, turning occasionally, until golden brown, about 2-3 minutes.
Remove with a slotted spoon and drain on paper towels.
In a shallow bowl, mix together 1/2 cup sugar and 1 tablespoon cinnamon.
While still warm, roll doughnut holes in cinnamon sugar until coated.
Serve immediately.
Tips
For best results, use a thermometer to maintain oil temperature.
These are best eaten the same day; store leftovers in an airtight container.
You can also bake them at 375°F for 10-12 minutes if you prefer not to fry.
