Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons milk
Royal icing or store-bought icing for decorating

Instructions
In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg, vanilla, and almond extract.
In a separate bowl, whisk flour, baking powder, and salt. Gradually add to butter mixture, alternating with milk, until dough comes together.
Divide dough in half, flatten into discs, wrap in plastic, and refrigerate for at least 1 hour.
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
On a lightly floured surface, roll dough to 1/4-inch thickness. Cut into Christmas shapes using cookie cutters.
Place cookies 2 inches apart on prepared sheets. Bake for 8-10 minutes, until edges are lightly golden.
Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Decorate with royal icing and sprinkles as desired. Let icing set before storing.
Tips
For softer cookies, do not overbake; edges should just barely brown.
Store undecorated cookies in an airtight container for up to a week, or freeze for up to 3 months.
Royal icing can be made with powdered sugar, meringue powder, and water; color with gel food coloring.
