Ingredients
1 lb fresh chorizo (casings removed)
1 lb ground beef (80/20)
1/2 cup finely chopped onion
2 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
4 slices manchego cheese
4 hamburger buns, split and toasted
1/4 cup mayonnaise
1 tsp smoked paprika (for aioli)
1 tsp lemon juice
1/2 cup arugula
Instructions
In a large bowl, combine chorizo, ground beef, onion, garlic, 1 tsp smoked paprika, salt, and pepper. Mix gently until just combined; do not overwork.
Divide mixture into 4 equal portions and shape into patties, about 3/4 inch thick. Make a slight indentation in the center of each patty.
Grill patties over medium-high heat (or cook in a skillet) for 4-5 minutes per side, until internal temperature reaches 160°F. During the last minute, top each patty with a slice of manchego cheese and cover to melt.
Meanwhile, mix mayonnaise, 1 tsp smoked paprika, and lemon juice in a small bowl to make the aioli.
Place arugula on the bottom half of each bun, then top with a patty. Spread aioli on the top bun and close the burger.
Serve immediately with your favorite sides.
Tips
Use fresh chorizo from the meat counter, not cured chorizo, for best texture.
To prevent burgers from puffing up, press a shallow dimple in the center of each patty.
Burgers can be cooked indoors in a cast-iron skillet if grilling isn't possible.
Leftover patties can be refrigerated for up to 3 days.
