Ingredients
1 lb ground beef (80/20)
1 tbsp olive oil
1/2 cup diced onion
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp paprika
1/2 tsp dried oregano
1/4 cup beef broth
4 slices provolone cheese
4 Italian-style hoagie rolls, split and toasted
1/2 cup giardiniera (pickled vegetable relish), drained
Instructions
Heat olive oil in a large skillet over medium-high heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook 30 seconds.
Add ground beef, breaking it up with a spoon. Season with salt, pepper, paprika, and oregano. Cook until browned, about 5-7 minutes.
Pour in beef broth and cook, stirring, until liquid is mostly absorbed, about 2 minutes. Use a spatula to finely chop the beef mixture into small pieces.
Divide the beef into 4 piles in the skillet. Top each pile with a slice of provolone cheese. Cover the skillet and cook until cheese melts, about 1 minute.
Place each cheesy beef pile onto the bottom half of a toasted roll. Top with giardiniera and close the sandwich. Serve immediately.
Tips
For extra flavor, toast the rolls with a little butter or olive oil.
Substitute mozzarella or cheddar if provolone is unavailable.
Leftover chopped beef can be refrigerated for up to 3 days and reheated.
