  4. Gently fold one-third of the meringue into the chocolate batter to lighten it, then fold in the remaining meringue until just combined. Do not overmix; a few streaks are okay.
  5. Grease a non-stick skillet or griddle with butter or oil and heat over very low heat. Place 4 metal ring molds (3-inch diameter, 1.5-inch tall) in the skillet and lightly grease the insides.
  6. Divide the batter evenly among the rings (about 1/2 cup each). Add 1 tablespoon water to the skillet (outside the rings) and cover with a lid. Cook for 6-7 minutes, until the bottoms are set and the tops are slightly puffed.
  7. Carefully flip the rings using tongs and a spatula. Add another tablespoon of water to the skillet, cover, and cook for another 5-6 minutes, until the pancakes are fully cooked and spring back when touched.
