Ingredients
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 ounces semisweet chocolate, finely chopped
Instructions
- In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt. Gradually whisk in milk until smooth.
- Place over medium heat and cook, stirring constantly with a whisk, until mixture thickens and comes to a boil, about 5-7 minutes.
- Remove from heat and stir in vanilla and chopped chocolate until melted and smooth.
- Let cool slightly, then pour into popsicle molds, leaving a little space at the top for expansion.
- Insert sticks and freeze until solid, at least 4 hours or overnight.
- To unmold, run warm water over the outside of the molds for a few seconds, then gently pull out the pops.
Tips
- For extra creaminess, use whole milk; avoid low-fat or non-dairy milks as they may not set properly.
- If you don't have popsicle molds, use small paper cups and wooden sticks.
- Store pops in an airtight container in the freezer for up to 2 weeks.
