Ingredients
1/2 cup unsalted butter
2 cups white sugar
1/2 cup milk
1/4 cup unsweetened cocoa powder
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
3 cups quick-cooking oats
1/2 cup chopped peanuts (optional)
Instructions
Line a baking sheet with parchment paper or wax paper.
In a medium saucepan over medium heat, combine butter, sugar, milk, and cocoa powder. Stir frequently and bring to a rolling boil. Let boil for 1 minute without stirring.
Remove from heat. Stir in peanut butter and vanilla extract until smooth.
Add oats and peanuts (if using); stir until well combined.
Drop by rounded tablespoonfuls onto the prepared baking sheet. Let cool at room temperature until set, about 30 minutes.
Store in an airtight container at room temperature for up to 1 week.
Tips
For best results, use quick-cooking oats, not old-fashioned rolled oats.
To ensure cookies set, boil the mixture for exactly 1 minute; under-boiling may cause soft cookies, over-boiling may make them dry.
Store in a cool, dry place; if they get too soft, refrigerate briefly.
