A classic French chocolate mousse that is rich, airy, and decadent. This recipe uses eggs and dark chocolate for a silky texture without gelatin.

Ingredients
200g dark chocolate (70% cocoa), chopped
3 large eggs, separated
2 tablespoons granulated sugar
1/4 teaspoon salt
1/2 cup heavy cream
1 teaspoon vanilla extract
Instructions
Melt the chocolate in a heatproof bowl set over a pan of simmering water, stirring until smooth. Remove from heat and let cool slightly.
In a separate bowl, whisk the egg yolks with 1 tablespoon of sugar until pale and thick. Stir in the melted chocolate and vanilla extract.
In a clean bowl, beat the egg whites with salt until foamy. Gradually add the remaining 1 tablespoon sugar and continue beating until stiff peaks form.
In another bowl, whip the heavy cream to soft peaks.
Fold one-third of the egg whites into the chocolate mixture to lighten it, then gently fold in the remaining whites until just combined. Finally, fold in the whipped cream.
Divide the mousse among 4 serving dishes. Refrigerate for at least 2 hours, or until set. Serve chilled.
Tips
For best results, use high-quality dark chocolate.
The mousse can be made a day ahead and kept covered in the fridge.
Garnish with whipped cream and chocolate shavings if desired.
