Ingredients
1 cup (2 sticks) unsalted butter, softened
2/3 cup granulated sugar
1 large egg yolk
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
8 ounces semisweet or dark chocolate, chopped
1 tablespoon coconut oil or vegetable shortening
Instructions
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large bowl, beat butter and sugar with an electric mixer until light and fluffy, about 3 minutes. Beat in egg yolk and vanilla.
In a separate bowl, whisk flour and salt. Gradually add to butter mixture, mixing on low until just combined. Do not overmix.
Transfer dough to a piping bag fitted with a large star tip (or use a cookie press). Pipe 1.5-inch rosettes or lines onto prepared baking sheets, spacing 1 inch apart.
Bake for 10-12 minutes, until edges are lightly golden. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Line a baking sheet with parchment paper. Melt chocolate and coconut oil in a microwave-safe bowl in 30-second bursts, stirring until smooth.
Dip each cooled cookie halfway into the melted chocolate, letting excess drip off. Place on prepared baking sheet. Refrigerate until chocolate is set, about 15 minutes.
