Ingredients
1 cup (200g) dark chocolate chips (60-70% cocoa)
1 tablespoon coconut oil or vegetable shortening
1 1/2 cups (200g) roasted salted peanuts
Instructions
Line a baking sheet with parchment paper or a silicone mat.
Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until melted and smooth (about 1-2 minutes total). Alternatively, melt using a double boiler.
Add the peanuts to the melted chocolate and stir until all peanuts are evenly coated.
Scoop the chocolate-covered peanuts onto the prepared baking sheet, spreading them into a single layer. Use two forks to separate any clumps if desired.
