A chewy, nutty muesli bar enrobed in rich dark chocolate, perfect for a healthy snack or on-the-go breakfast.

Ingredients
2 cups rolled oats
1/2 cup chopped almonds
1/2 cup dried cranberries
1/4 cup pumpkin seeds
1/4 cup honey
1/4 cup coconut oil
1/4 cup brown sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
1 cup dark chocolate chips
Instructions
Preheat oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper.
Spread oats and almonds on a baking sheet; toast for 8-10 minutes until lightly golden. Let cool.
In a small saucepan, combine honey, coconut oil, brown sugar, vanilla, and salt. Heat over medium, stirring until sugar dissolves and mixture is smooth.
In a large bowl, mix toasted oats and almonds with dried cranberries and pumpkin seeds. Pour honey mixture over dry ingredients and stir until well coated.
Transfer mixture to prepared baking dish. Press firmly and evenly with a spatula or your hands. Refrigerate for 1 hour until firm.
Melt dark chocolate chips in a double boiler or microwave in 30-second bursts, stirring until smooth.
Remove muesli block from dish and cut into 12 bars. Dip each bar into melted chocolate or drizzle chocolate over bars. Place on a parchment-lined tray.
Refrigerate until chocolate sets, about 30 minutes. Store in an airtight container in the fridge.
Tips
For extra crunch, add 2 tablespoons of chia seeds or flax seeds.
Store bars in the refrigerator for up to 2 weeks, or freeze for up to 3 months.
