Ingredients
1/2 cup all-purpose flour
1/4 cup granulated sugar
2 tablespoons cornstarch
1/4 teaspoon salt
1/4 cup vegetable oil
1/4 cup water
1/2 teaspoon vanilla extract
12 small paper fortunes
8 ounces semisweet chocolate, chopped
1 tablespoon coconut oil (optional, for thinning)
Sprinkles or crushed nuts for decoration
Instructions
Preheat oven to 350°F. Line a baking sheet with parchment paper.
In a small bowl, whisk together flour, sugar, cornstarch, and salt. Add oil, water, and vanilla; whisk until smooth batter forms.
Drop 1 tablespoon of batter onto prepared baking sheet and spread into a 3-inch circle. Repeat to make only 2-3 cookies per batch (they must be shaped quickly).
Bake for 8-10 minutes until edges are golden brown. Remove from oven and let cool for 30 seconds.
Working quickly, place a fortune in the center of a cookie. Fold the cookie in half to form a half-moon, then gently bend the ends downward over the edge of a cup or rolling pin to create the classic shape. Cool completely on a wire rack.
Repeat with remaining batter, baking and shaping in batches.
Melt chocolate and coconut oil together in a microwave-safe bowl in 30-second bursts, stirring until smooth.
Dip each cooled cookie halfway into melted chocolate, letting excess drip off. Place on parchment paper and immediately add sprinkles or nuts. Refrigerate until chocolate sets, about 15 minutes.
Tips
Work with only 2-3 cookies at a time; the batter hardens quickly and becomes brittle.
Store in an airtight container at room temperature for up to 1 week.
Use white chocolate or dark chocolate for variation.
