Ingredients
2 boneless beef sirloin steaks (about 6 oz each), pounded to 1/4-inch thickness
Salt and black pepper to taste
2 tablespoons olive oil
2 crusty sandwich rolls (e.g., ciabatta or Portuguese rolls), split
4 tablespoons mayonnaise
4 slices cooked ham
4 slices mozzarella cheese
1/2 cup pitted green olives, sliced
2 hard-boiled eggs, sliced
2 fried eggs (sunny-side up)
1 tomato, sliced
1/2 head lettuce, shredded
Instructions
Season steaks with salt and pepper. Heat oil in a skillet over high heat. Cook steaks for 2-3 minutes per side for medium-rare. Transfer to a plate and let rest.
Lightly toast the split rolls. Spread mayonnaise on both halves.
On the bottom half of each roll, layer: lettuce, tomato slices, steak, ham, mozzarella, olives, hard-boiled egg slices, and finally a fried egg.
Close the sandwich with the top half of the roll. Serve immediately.
Optionally, secure with a toothpick and cut in half for easier handling.

Use a tender cut like sirloin or ribeye; pounding ensures even cooking.
Traditional chivito includes bacon and bell peppers; feel free to add.
Best served immediately while the egg is still runny.
