Ingredients
4 large potatoes (about 800g), peeled and cut into thick chips
2 tablespoons vegetable oil
2 tablespoons butter
1 onion, finely chopped
2 tablespoons all-purpose flour
2 cups beef stock
1 teaspoon Worcestershire sauce
Salt and black pepper to taste
Instructions
Preheat oven to 200°C (400°F). Place chips on a baking tray, toss with oil, and season with salt. Bake for 25-30 minutes, turning once, until golden and crispy.
Meanwhile, melt butter in a saucepan over medium heat. Add onion and cook until softened, about 5 minutes.
Sprinkle flour over onions and stir constantly for 1 minute.
Gradually whisk in beef stock and Worcestershire sauce. Bring to a simmer, stirring, until thickened, about 5 minutes. Season with salt and pepper.
Remove chips from oven and divide among plates. Pour gravy over chips and serve immediately.
Tips
For extra crispy chips, soak cut potatoes in cold water for 30 minutes before baking, then pat dry.
Gravy can be made ahead and reheated; add a splash of stock if too thick.
