Ingredients
3 large eggs
1 cup warm water (about 110°F/45°C)
1/2 teaspoon salt
1/2 teaspoon chicken bouillon powder (optional)
1 teaspoon sesame oil
1 tablespoon light soy sauce
1 green onion, thinly sliced
Instructions
In a bowl, beat the eggs with salt and chicken bouillon powder (if using) until well combined. Pour in warm water and whisk gently to avoid bubbles.
Strain the egg mixture through a fine-mesh sieve into a heatproof bowl or dish that fits in your steamer. This ensures a smooth texture.
Cover the bowl with plastic wrap or a lid. Place in a steamer over boiling water, reduce heat to medium-low, and steam for 12-15 minutes until the center is just set but still jiggles slightly.
Remove from steamer. Drizzle with sesame oil and light soy sauce. Garnish with sliced green onion. Serve hot.
Tips
For extra smooth eggs, use warm water (not hot) and avoid over-beating.
You can add cooked shrimp, minced pork, or century egg for variation.
Steam on low heat to prevent bubbles and a rubbery texture.
