For Peanut Cookies: 1 cup roasted peanuts, 1/2 cup all-purpose flour, 1/4 cup powdered sugar, 1/4 cup vegetable oil, 1 egg yolk for glaze
Instructions
Prepare spring rolls: In a bowl, mix cabbage, carrot, bean sprouts, scallions, soy sauce, and sesame oil. Place a wrapper diagonally, add 2 tablespoons filling, fold sides, and roll tightly. Seal with water. Heat oil to 350°F and fry spring rolls until golden, about 3-4 minutes. Drain on paper towels.
Prepare sesame sticks: In a bowl, combine flour, sesame seeds, salt, and five-spice powder. Add oil and water, mix into a dough. Roll out to 1/4-inch thickness, cut into 3-inch long sticks. Place on baking sheet, bake at 350°F for 12-15 minutes until golden.
Prepare peanut cookies: Grind peanuts in a food processor until fine. Mix with flour and powdered sugar. Add oil and form into a dough. Roll into 1-inch balls, place on baking sheet, flatten slightly. Brush with egg yolk. Bake at 350°F for 10-12 minutes until lightly golden.
Arrange all snacks on a large platter. Serve at room temperature.
Tips
Spring rolls can be made ahead and reheated in a 350°F oven for 5 minutes.
Sesame sticks and peanut cookies keep well in an airtight container for up to a week.
For a healthier option, bake spring rolls at 400°F for 15 minutes, brushing with oil.
