Ingredients
1 lb boneless skinless chicken thighs, cut into bite-sized pieces
2 tablespoons soy sauce
1 tablespoon Shaoxing wine or dry sherry
1 teaspoon cornstarch
1/2 teaspoon white pepper
2 tablespoons vegetable oil
3 cloves garlic, minced
1 tablespoon grated fresh ginger
1/2 cup dried apricots, halved
1/4 cup chicken broth
2 tablespoons honey
1 tablespoon rice vinegar
1 teaspoon sesame oil
2 green onions, sliced
Instructions
In a bowl, combine chicken with soy sauce, Shaoxing wine, cornstarch, and white pepper. Marinate for 10 minutes.
Heat vegetable oil in a wok or large skillet over high heat. Add chicken and stir-fry until golden and cooked through, about 5 minutes. Remove and set aside.
Reduce heat to medium. Add garlic and ginger, stir-fry for 30 seconds until fragrant.
Add dried apricots, chicken broth, honey, and rice vinegar. Bring to a simmer and cook for 2 minutes until apricots soften.
Return chicken to the wok. Toss to coat in sauce and heat through, about 1 minute.
Remove from heat. Stir in sesame oil and garnish with green onions. Serve immediately over steamed rice.
Tips
For a spicier version, add 1/2 teaspoon red pepper flakes with the garlic.
Substitute dried apricots with dried peaches or nectarines if desired.
