Ingredients
- 1.5 lbs beef shank or brisket, cut into 2-inch chunks
- 2 tablespoons vegetable oil
- 1 large onion, sliced
- 4 cloves garlic, smashed
- 1 (2-inch) piece ginger, sliced
- 2 star anise
- 1 cinnamon stick
- 2 tablespoons soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon sugar
- 6 cups beef broth or water
- 8 oz dried wheat noodles (or fresh)
- 4 baby bok choy, halved
- Salt and white pepper to taste
- Chopped scallions and cilantro for garnish
Instructions
- Blanch beef chunks in boiling water for 5 minutes, drain and rinse to remove impurities.
- Heat oil in a large pot over medium-high heat. Sear beef until browned on all sides, about 5 minutes. Remove and set aside.
- In the same pot, sauté onion, garlic, ginger, star anise, and cinnamon until fragrant, about 2 minutes.
- Return beef to pot. Add soy sauces, sugar, and broth. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 hours until beef is tender.
- While beef simmers, cook noodles according to package directions. Drain and divide among bowls.
- Blanch bok choy in boiling water for 1 minute, drain.
- Once beef is tender, season broth with salt and white pepper. Remove star anise and cinnamon stick.
- Ladle broth and beef over noodles. Top with bok choy, scallions, and cilantro.
Tips
- For extra flavor, toast star anise and cinnamon in dry pan before adding oil.
- Store leftover broth and beef separately from noodles to prevent sogginess.
- Add chili oil or chili crisp for a spicy kick.
