- 1 tablespoon lime juice
Instructions
- Cut the corn kernels from the cobs; reserve the cobs. You should have about 4 cups of kernels.
- In a large pot, heat olive oil over medium heat. Add onion and garlic; cook until softened, about 5 minutes.
- Add corn kernels, reserved cobs, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Remove the cobs and discard. Let the soup cool slightly, then puree in a blender until smooth (work in batches if needed).
- Stir in lime juice. Chill in the refrigerator for at least 2 hours or until cold.
- Serve cold, garnished with fresh basil leaves.
