Ingredients
2 lbs chicken wings, separated into drumettes and flats
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 carrots, peeled and sliced
2 celery stalks, sliced
3 tbsp all-purpose flour
4 cups chicken broth
1 cup diced tomatoes (canned)
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
2 tbsp chopped fresh parsley for garnish
Instructions
Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken wings in batches and brown on all sides, about 5 minutes per batch. Remove and set aside.
Reduce heat to medium. Add onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.
Sprinkle flour over vegetables and stir to coat. Cook for 1 minute.
Slowly pour in chicken broth while stirring constantly. Add diced tomatoes, thyme, bay leaf, and browned chicken wings. Season with salt and pepper.
Bring to a boil, then reduce heat to low. Cover and simmer for 45-50 minutes, until chicken is tender and stew has thickened.
Remove bay leaf. Adjust seasoning if needed. Serve hot, garnished with fresh parsley.
