Ingredients
1 lb boneless skinless chicken thighs, cut into bite-sized pieces
1/2 cup plain yogurt
2 tbsp tikka masala paste
1 tbsp lemon juice
1 tsp grated ginger
1 tsp minced garlic
1/2 tsp salt
4 sub rolls, split
1/2 cup sliced red onion
1/2 cup sliced cucumber
1/2 cup shredded lettuce
1/4 cup mint chutney
1/4 cup yogurt sauce (mix 1/4 cup yogurt + 1 tbsp lemon juice + salt)
Instructions
In a bowl, combine yogurt, tikka masala paste, lemon juice, ginger, garlic, and salt. Add chicken pieces and marinate for at least 30 minutes (or up to overnight).
Preheat grill or broiler to high. Thread chicken onto skewers (if using). Grill or broil chicken for 10-12 minutes, turning occasionally, until charred and cooked through. Let rest 2 minutes then remove from skewers.
Lightly toast sub rolls under broiler or on a skillet.
Spread mint chutney on bottom half of each roll. Top with chicken, then red onion, cucumber, and lettuce.
Drizzle yogurt sauce over the filling and close the sub. Serve immediately.
Tips
For extra heat, add sliced green chilies or a dash of chili powder to the marinade.
Substitute chicken with paneer for a vegetarian version.
These subs are best served fresh but can be wrapped and refrigerated for up to a day.
