Ingredients
500 g boneless chicken thighs, cut into 2-inch pieces
1 cup plain yogurt
2 tablespoons lemon juice
2 teaspoons ginger-garlic paste
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon garam masala
1 teaspoon paprika
1/2 teaspoon turmeric
1/2 teaspoon red chili powder (adjust to taste)
1 teaspoon salt
2 tablespoons vegetable oil
1 tablespoon butter (for basting)
Lemon wedges and onion rings for serving
Instructions
In a large bowl, combine yogurt, lemon juice, ginger-garlic paste, cumin, coriander, garam masala, paprika, turmeric, chili powder, salt, and oil. Mix well to form a smooth marinade.
Add chicken pieces to the marinade and coat thoroughly. Cover and refrigerate for at least 2 hours, preferably overnight.
Preheat oven to 400°F (200°C). If using skewers, soak wooden skewers in water for 30 minutes. Thread chicken pieces onto skewers, leaving space between pieces.
Place skewers on a baking sheet lined with foil or a wire rack. Bake for 15 minutes, then turn and bake for another 5 minutes. Alternatively, grill over medium-high heat for 12-15 minutes, turning occasionally.
Melt butter and brush over the chicken tikka. Broil for 2-3 minutes until slightly charred. Serve hot with lemon wedges and onion rings.
Tips
For extra smoky flavor, cook over charcoal or use a grill pan.
Leftover chicken tikka can be stored in the refrigerator for up to 3 days.
Serve with mint chutney and naan bread for a complete meal.
