Ingredients
1 lb ground chicken
1/2 cup panko breadcrumbs
1 large egg, lightly beaten
2 green onions, finely chopped
1 tsp grated fresh ginger
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1/2 cup soy sauce
1/4 cup mirin
2 tbsp brown sugar
1 tbsp rice vinegar
1 tsp sesame oil
4 slices canned pineapple
4 brioche burger buns, split and toasted
4 leaves lettuce
1 tbsp vegetable oil for cooking
Instructions
Make teriyaki sauce: In a small saucepan, combine soy sauce, mirin, brown sugar, rice vinegar, and sesame oil. Bring to a simmer over medium heat, stirring until sugar dissolves. Simmer for 5 minutes until slightly thickened. Remove from heat and set aside.
In a large bowl, combine ground chicken, panko, egg, green onions, ginger, garlic, salt, and pepper. Mix gently until just combined. Divide into 4 equal portions and shape into patties, about 3/4-inch thick.
Heat vegetable oil in a large nonstick skillet over medium-high heat. Cook patties for 4-5 minutes per side, or until cooked through (internal temperature 165°F). Brush each patty generously with teriyaki sauce during the last minute of cooking.
In the same skillet, grill pineapple slices for 1-2 minutes per side until lightly charred. Brush with teriyaki sauce.
Assemble burgers: Place lettuce on bottom bun, top with chicken patty, grilled pineapple, and additional teriyaki sauce if desired. Close with top bun.
Serve immediately.
Tips
For extra flavor, marinate the patties in a little teriyaki sauce for 30 minutes before cooking.
To make ahead, prepare patties and sauce separately; refrigerate up to 24 hours.
