Ingredients
1 lb chicken breast tenders (or boneless skinless chicken breasts cut into strips)
1 cup all-purpose flour
2 large eggs
2 tablespoons milk
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
vegetable oil for frying
Instructions
Set up a breading station: In a shallow dish, combine flour, garlic powder, paprika, salt, and pepper. In another dish, whisk eggs and milk. In a third dish, mix panko and Parmesan cheese.
Pat chicken tenders dry with paper towels. Dredge each tender in the flour mixture, shaking off excess. Dip into egg mixture, then coat with panko mixture, pressing gently to adhere.
Heat about 1/2 inch of oil in a large skillet over medium-high heat to 350°F (175°C).
Fry chicken tenders in batches, without crowding, for 3-4 minutes per side, until golden brown and cooked through (internal temperature 165°F).
Transfer to a paper towel-lined plate to drain. Serve hot with your choice of dipping sauce.
Tips
For extra crunch, use panko breadcrumbs instead of regular.
Bake at 425°F for 15-18 minutes instead of frying for a lighter version.
