Ingredients
1 lb chicken breast tenders
1 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
vegetable oil for frying
4 cups frozen french fries
1/2 cup ketchup
1/4 cup honey mustard
Instructions
Preheat oven to 425°F (220°C). Spread frozen fries on a baking sheet and bake according to package directions until crispy.
Meanwhile, set up breading station: in a shallow bowl, mix flour, paprika, garlic powder, salt, and pepper. In another bowl, beat eggs. In a third bowl, place panko.
Pat chicken tenders dry. Dredge each tender in flour mixture, then dip in egg, then coat with panko, pressing gently to adhere.
Heat 1/2 inch oil in a large skillet over medium-high heat to 350°F (175°C). Fry tenders in batches, 3-4 minutes per side, until golden brown and cooked through (internal temp 165°F). Drain on paper towels.
To serve, divide fries among 4 baskets or plates. Top with chicken tenders. Serve with ketchup and honey mustard on the side.
