Ingredients
1 lb boneless skinless chicken breasts
2 tbsp olive oil
2 tbsp chipotle peppers in adobo sauce, minced
2 cloves garlic, minced
1 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
8 small corn or flour tortillas
1 cup shredded lettuce
1 cup diced tomatoes
1/2 cup shredded Mexican cheese blend
1/4 cup chopped fresh cilantro
1 lime, cut into wedges
Instructions
In a small bowl, mix olive oil, chipotle peppers, garlic, cumin, salt, and pepper to create a marinade.
Place chicken breasts in a resealable bag or shallow dish, add marinade, and coat evenly. Let marinate for at least 10 minutes (or up to 2 hours in the fridge).
Heat a grill pan or skillet over medium-high heat. Cook chicken for 5-6 minutes per side, until internal temperature reaches 165°F. Let rest 5 minutes, then dice into small pieces.
Warm tortillas in a dry skillet or microwave.
Assemble tacos: fill each tortilla with chicken, lettuce, tomatoes, cheese, and cilantro. Serve with lime wedges.
