Ingredients
1 lb boneless skinless chicken breasts
2 tbsp olive oil
2 tbsp lime juice
2 cloves garlic, minced
1 tsp ground cumin
1 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
8 small corn or flour tortillas
1 cup shredded lettuce
1 cup diced tomatoes
1/2 cup shredded cheddar cheese
1/4 cup chopped fresh cilantro
1/4 cup sour cream (optional)
Instructions
In a bowl, whisk olive oil, lime juice, minced garlic, cumin, chili powder, salt, and pepper. Add chicken breasts and coat well. Marinate 10 minutes.
Grill or pan-sear chicken over medium-high heat for 5-6 minutes per side until cooked through (internal temp 165°F). Let rest 5 minutes, then dice into bite-sized pieces.
Warm tortillas in a dry skillet or microwave.
Assemble tacos: fill each tortilla with diced chicken, lettuce, tomatoes, cheese, and cilantro. Add sour cream if desired.
For wraps: lay tortilla flat, place filling in center, fold sides in, then roll tightly. Cut in half.
