Ingredients
1.5 lbs boneless skinless chicken thighs, cut into 1-inch pieces
1/4 cup olive oil
3 tbsp lemon juice
4 cloves garlic, minced
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried rosemary
1/4 cup plain Greek yogurt (for serving)
1/2 cucumber, diced (for serving)
1 tomato, diced (for serving)
1/2 red onion, thinly sliced (for serving)
4 pita breads (for serving)
Instructions
In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, pepper, and rosemary. Add chicken pieces, toss to coat, cover, and refrigerate for at least 1 hour (or up to 4 hours).
If using wooden skewers, soak them in water for 30 minutes. Preheat grill or grill pan to medium-high heat.
Thread chicken pieces onto skewers, leaving a small gap between pieces.
Grill skewers, turning occasionally, until chicken is cooked through and has nice char marks, about 10-12 minutes (internal temperature 165°F).
Warm pita breads on the grill for about 30 seconds per side.
Serve chicken skewers on warm pita with yogurt, cucumber, tomato, and red onion.
Tips
For extra flavor, add 1 teaspoon of smoked paprika to the marinade.
Serve with lemon wedges and tzatziki sauce if desired.
Leftover chicken can be stored in the fridge for up to 3 days.
