Ingredients
1 whole chicken (3-4 lbs), cut into pieces
2 carrots, peeled and chopped
2 celery stalks, chopped
1 large onion, quartered
4 cloves garlic, smashed
1 bay leaf
1 teaspoon black peppercorns
1 teaspoon salt
8 cups cold water
Instructions
Place chicken pieces in a large stockpot. Add carrots, celery, onion, garlic, bay leaf, peppercorns, and salt.
Pour in cold water, ensuring chicken is just covered. Bring to a boil over high heat, then reduce to a simmer.
Skim off any foam that rises to the surface. Simmer partially covered for 1.5 to 2 hours, until chicken is very tender and broth is flavorful.
Remove chicken pieces and set aside to cool. Strain broth through a fine-mesh sieve into a large bowl, discarding vegetables.
Once chicken is cool enough to handle, remove meat from bones and shred. Discard bones and skin. Return shredded chicken to broth if desired, or use separately.
Let broth cool completely, then refrigerate. Skim off solidified fat before using.
Tips
For a clearer broth, strain through cheesecloth.
Store in airtight container in fridge up to 5 days or freeze up to 3 months.
Add herbs like thyme or parsley for extra flavor.
Use leftover chicken in salads, sandwiches, or casseroles.
