Ingredients
1 lb boneless skinless chicken breasts
1/2 cup mayonnaise
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup finely chopped celery
1/4 cup finely chopped red onion
2 tablespoons chopped fresh parsley
Instructions
Place chicken breasts in a pot and cover with water. Bring to a boil, then reduce heat and simmer until cooked through, about 15-20 minutes. Drain and let cool.
Shred or dice the cooled chicken into bite-sized pieces.
In a large bowl, whisk together mayonnaise, lemon juice, salt, and pepper.
Add the chicken, celery, red onion, and parsley to the bowl. Stir until well combined.
Taste and adjust seasoning as needed. Serve immediately or refrigerate for at least 30 minutes to let flavors meld.
