Ingredients
2 cups cooked chicken, shredded or diced
1/2 cup mayonnaise
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup celery, finely diced
1/2 cup red grapes, halved
2 tablespoons fresh parsley, chopped
8 slices bread (white, whole wheat, or croissants)
4 lettuce leaves (optional)
Instructions
In a medium bowl, combine the cooked chicken, mayonnaise, lemon juice, salt, and pepper. Mix well.
Add the celery, grapes, and parsley. Stir until evenly distributed.
Taste and adjust seasoning if needed.
Lay out 4 slices of bread. If using, place a lettuce leaf on each.
Divide the chicken salad evenly among the bread slices, spreading to the edges.
Top with the remaining bread slices. Cut sandwiches in half and serve.
Tips
For extra flavor, toast the bread lightly before assembling.
