Instructions
Season chicken breasts with chili powder, cumin, garlic powder, salt, and pepper.
Heat 1/2 tablespoon olive oil in a skillet over medium-high heat. Cook chicken for 5-7 minutes per side until cooked through. Let rest, then dice into small pieces.
In the same skillet, add remaining oil and sauté bell pepper and onion until softened, about 5 minutes. Remove from heat.
Lay tortillas flat. On one half of each tortilla, sprinkle cheese, then top with diced chicken and pepper-onion mixture. Sprinkle more cheese on top and fold the other half over.
Heat a clean skillet or griddle over medium heat. Cook each quesadilla for 2-3 minutes per side until golden brown and cheese is melted.
Cut into wedges and serve with sour cream, salsa, or guacamole if desired.
Tips
For extra flavor, add a squeeze of lime juice to the chicken before serving.
Leftover quesadillas can be reheated in a skillet or oven to maintain crispiness.
Substitute chicken with black beans for a vegetarian version.
