Ingredients
1.5 lbs boneless skinless chicken breasts, cut into bite-sized pieces
1 cup all-purpose flour
2 large eggs, beaten
1.5 cups panko breadcrumbs
1 cup grated Parmesan cheese, divided
1 tsp garlic powder
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
2 cups marinara sauce
2 cups shredded mozzarella cheese
2 tbsp olive oil
Instructions
Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Set up a breading station: in one shallow bowl, place flour. In a second, beat eggs. In a third, combine panko, 1/2 cup Parmesan, garlic powder, oregano, salt, and pepper.
Dredge chicken pieces in flour, then dip in egg, then coat with panko mixture. Place on a plate.
Heat olive oil in a large skillet over medium-high heat. Cook chicken pieces in batches until golden brown on all sides, about 4-5 minutes per batch. Transfer to a paper towel-lined plate.
Spread 1/2 cup marinara sauce in the bottom of the prepared baking dish. Arrange half the chicken over the sauce. Top with half the remaining marinara, half the mozzarella, and half the remaining Parmesan. Repeat layers with remaining chicken, sauce, and cheeses.
Bake for 20-25 minutes until bubbly and cheese is melted and golden. Let rest 5 minutes before serving.
Tips
Serve over pasta or with a side salad and garlic bread.
