Ingredients
1 lb boneless skinless chicken breasts, cut into 1-inch pieces
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
2 large eggs
1 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
Vegetable oil, for frying
Instructions
Season chicken pieces with salt, pepper, garlic powder, and paprika.
Set up a breading station: one bowl with flour, one with beaten eggs, and one with panko mixed with Parmesan.
Dredge each chicken piece in flour, then dip in egg, then coat with panko mixture, pressing gently to adhere.
Heat about 1/2 inch of oil in a large skillet over medium-high heat until shimmering.
Fry nuggets in batches, without crowding, for 3-4 minutes per side until golden brown and cooked through (internal temp 165°F).
Drain on paper towels. Serve immediately with your favorite dipping sauce.
Tips
For extra crispiness, let breaded nuggets rest for 10 minutes before frying.
Bake at 400°F for 15-18 minutes, flipping halfway, for a lighter version.
Serve with ketchup, honey mustard, or ranch dressing.
