Preheat oven to 350°F (175°C). Cut a thin slice off the top of each bread loaf. Hollow out the inside, leaving a 1/2-inch thick shell. Reserve the bread tops and removed bread for another use.
Place bread bowls on a baking sheet and bake for 10 minutes until lightly toasted. Set aside.
In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; cook until softened, about 5 minutes. Add garlic and cook for 1 minute.
Pour in chicken broth and bring to a boil. Add egg noodles and cook according to package directions until tender.
Stir in shredded chicken, thyme, salt, and pepper. Simmer for 5 minutes.
Ladle the soup into the toasted bread bowls. Garnish with fresh parsley and serve immediately.
Tips
For a creamier soup, stir in 1/2 cup heavy cream at the end.
You can use rotisserie chicken for convenience.
Leftover soup can be stored separately from bread bowls.
