Ingredients
1 lb boneless skinless chicken breasts, cut into 1-inch pieces
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
2 large eggs
2 tablespoons milk
1 1/2 cups panko breadcrumbs

Instructions
In a shallow bowl, mix flour, salt, pepper, garlic powder, and paprika.
In another bowl, whisk eggs and milk together.
Place panko breadcrumbs in a third shallow bowl.
Dredge each chicken piece in the flour mixture, shaking off excess, then dip in egg mixture, and finally coat with panko, pressing gently to adhere.
Heat about 1 inch of oil in a deep skillet to 350°F (175°C). Fry nuggets in batches for 3-4 minutes per side until golden brown and cooked through (internal temp 165°F). Alternatively, bake at 400°F (200°C) for 12-15 minutes, flipping halfway.
