  2. Place each chicken breast between two sheets of plastic wrap and pound to 1/4-inch thickness using a rolling pin. Season both sides with remaining salt and pepper.
  3. Cut the chilled butter log into 4 equal pieces. Place one piece in the center of each chicken breast. Fold the sides over the butter, then roll up tightly, tucking in the ends to enclose the butter completely. Secure with toothpicks if needed.
  4. Set up a breading station: flour in one shallow dish, beaten eggs in another, and panko in a third. Coat each chicken roll first in flour, shaking off excess, then dip in egg, and finally coat with panko, pressing gently to adhere.
  5. Preheat oven to 375°F (190°C). In a large oven-safe skillet, heat about 1/2 inch of vegetable oil over medium-high heat. Fry the chicken Kyivs for 2-3 minutes per side until golden brown.
