Ingredients
1 lb boneless, skinless chicken thighs
3 cloves garlic, minced
1 tbsp dried oregano
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
1/2 cup Greek yogurt
1/2 cucumber, grated and squeezed dry
1 tbsp lemon juice
1 tbsp fresh dill, chopped
4 pita breads
1/2 red onion, thinly sliced
1 tomato, sliced
1/2 cup crumbled feta cheese
Instructions
In a bowl, combine minced garlic, oregano, cumin, paprika, salt, pepper, and olive oil. Add chicken thighs and coat well. Marinate for at least 30 minutes.
While chicken marinates, make tzatziki: mix Greek yogurt, grated cucumber, lemon juice, and dill. Season with salt to taste. Refrigerate until ready.
Grill or pan-sear chicken over medium-high heat for 6-7 minutes per side, until cooked through (internal temp 165°F). Let rest 5 minutes, then slice thinly.
Warm pita breads on the grill or in a dry skillet for about 30 seconds per side.
Assemble gyros: spread tzatziki on pita, top with sliced chicken, red onion, tomato, and feta. Fold and serve.

Chicken can be marinated overnight for deeper flavor.
